What’s the best cooking tip you’d give to others? “Always trust your instinct.” What’s the best cooking tip you’d give to others? “Again, always trust your instinct!” What six basics should we always have in the cupboard? “Olive oil, tinned tomatoes, Risotto rice, spaghetti, salted anchovies and Maldon sea salt.” What six basics should we always have in the fridge? “Flat leaf parsley, butter, Prosciutto, Parmesan cheese, lemons and chocolate.” What’s your favourite indulgence? “Tagliavini with white truffes.” What are your favourite kitchen gadgets? “My Italian potato peeler and pestle & mortar.” What’s your favourite fail-safe dish? “Pasta e fagioli.” What’s your ideal three-course menu for a casual dinner with friends? “Selection of Antipasto, Spaghetti alla Vongole and a lovely piece of Gorgonzola Naturale.” What’s your ideal three-course menu for a romantic dinner? “Blinis and Caviar, Poached Langoustine Aioli and Blood Orange Sorbet.” What’s the biggest no-no when cooking? “Too much salt!” *Theo Randall specialises in creating regional, Italian dishes.
